Method
1.In a large saucepan, heat oil on high. Brown beef 3-4 minutes, stirring. Add seasoning mix and cook 1 minute, stirring.
2.Stir in tomatoes and water. Reduce heat to medium. Simmer, partially covered, 20 minutes.
3.Add capsicum and onion. Reduce heat to low. Simmer gently, covered, 4-5 minutes until beef and vegetables are tender.
4.Top heated tortillas with cucumber, beef, sour cream and coriander. Wrap to serve.
You could also add sliced tomato, avocado and grated cheese. Store: this beef filling is perfect for freezing in an airtight container for 2-3 months.
