Beef soft shell tacos
These tasty, filling tacos are perfect for feeding a hungry family.

Ingredients
Beef soft shell tacos
- 1 tablespoon vegetable oil
- 500 gram beef chuck steak, trimmed, thinly sliced
- 35 gram packet taco seasoning mix
- 400 gram can crushed tomatoes
- 1 cup water
- 1 green capsicum, seeded, thinly sliced
- 1 red onion, thinly sliced
- 250 gram packet mini tortillas (10), heated
- 2 lebanese cucumbers, peeled into ribbons
- sour cream, to serve
- small coriander sprigs, to serve
Method
Beef soft shell tacos
- 1In a large saucepan, heat oil on high. Brown beef 3-4 minutes, stirring. Add seasoning mix and cook 1 minute, stirring.
- 2Stir in tomatoes and water. Reduce heat to medium. Simmer, partially covered, 20 minutes.
- 3Add capsicum and onion. Reduce heat to low. Simmer gently, covered, 4-5 minutes until beef and vegetables are tender.
- 4Top heated tortillas with cucumber, beef, sour cream and coriander. Wrap to serve.
Notes
You could also add sliced tomato, avocado and grated cheese. Store: this beef filling is perfect for freezing in an airtight container for 2-3 months.
