Creamy potato mash

Method

1.In a bowl, combine mince and stuffing mix. Divide into 4 equal portions. Form each into an oval shape. Make an indent in centre of each and push in a cheese cube.
2.Lightly coat each patty in flour. Dip into egg, then press into combined chips, crumbs and sesame seeds to coat. Place on a tray and chill for 20 minutes.
3.For the creamy potato mash: In a large saucepan of boiling, salted water, cook potatoes and garlic for 10 minutes. Drain, return to saucepan, then mash with cream and butter until smooth. Season and keep warm.
4.In a large frying pan, heat oil on high. Cook schnitzel for 4-5 minutes each side until golden and cooked. Drain ona paper towel. Serve with mash, gravy and broccolini.
  • Lamb, pork or chicken mince also work well in this recipe.
