1.Preheat oven to moderate, 180°C. Lightly grease a large baking dish. Cook the rice following packet instructions and cool.
2.In a large frying pan, heat oil on medium. Sauté capsicum, onion and garlic for 4-5 minutes until tender. Add mince, then cook, stirring, for 4-5 minutes until browned.
3.Sprinkle over seasoning and cook for 1 minute. Add tomatoes and water to pan, then bring mixture to the boil. Simmer for 4-5 minutes until mixture thickens. Stir in corn and rice. Season.
4.Divide mince mixture between tortillas and roll upto enclose filling. Place into dish and sprinkle with cheese. Bake for 15-20 minutes until cheese is melted and golden.
5.In a medium bowl, mash avocado and 2 teaspoons lemon juice.
6.Serve burritos topped with sour cream, guacamole, salsa and coriander sprigs.
If preferred, replace mince with shredded rotisserie chicken – this will reduce the cooking time.
