  • 1 tablespoon olive oil
  • 1 small onion, very finely chopped
  • 500 gram beef mince
  • 2 tablespoon chopped parsley
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • salt and pepper
  • 1 tablespoon oil, extra
  • 80 gram blue cheese, cut into 10 slices
  • 10 slider buns
  • 10 baby lettuce leaves
  • 2 large tomatoes, sliced
  • selection of sliced onion, tomato relish, cornichons, to serve

  • 1
Heat oil in a small frying pan over medium-low heat. Add onion and cook for 3-4 minutes until softened. Set aside to cool.
  • 2
Mix mince, cooled onion, parsley, Worcestershire sauce and mustard in a bowl. Season with salt and pepper and form into 10 patties.
  • 3
Heat extra oil in a frying pan over medium heat. Cook meat patties for 3-4 minutes on each side or until cooked through. Add blue cheese before removing patties from the pan so the slice starts to melt on the hot patty.
  • 4
To serve, split sliders and insert lettuce, tomato slices, your choice of sliced onion, tomato relish and cornichons, then top with patties. Secure bun top with a toothpick.

Use a ¼-cup measure to ensure patties are all the same size. If time allows, place the patties on a plate, cover and refrigerate for 30 minutes for the flavours to develop.
