Beans with tomato walnut sauce
- 1 kilogram green beans, trimmed
- 425 gram canned crushed tomatoes
- 1 tablespoon olive oil
- 2 clove garlic, crushed
- 2 teaspoon ground coriander
- 2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 3/4 cup coarsely chopped roasted walnuts
- 1/2 cup coarsely chopped fresh coriander
- 1 teaspoon white sugar
- 1 red capsicum (150g), sliced thinly
- 1 yellow capsicum (150g), sliced thinly
Method
Beans with tomato walnut sauce
- 1Boil, steam or microwave beans until tender; drain.
- 2Blend or process undrained tomatoes until smooth.
- 3Heat oil in large frying pan; cook garlic, spices and nuts, stirring, until fragrant. Add tomatoes, fresh coriander and sugar; cook, stirring, until heated through. Remove from heat, stir in capsicum and beans, season to taste.
