Beans with tomato walnut sauce
  • 1 kilogram green beans, trimmed
  • 425 gram canned crushed tomatoes
  • 1 tablespoon olive oil
  • 2 clove garlic, crushed
  • 2 teaspoon ground coriander
  • 2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 3/4 cup coarsely chopped roasted walnuts
  • 1/2 cup coarsely chopped fresh coriander
  • 1 teaspoon white sugar
  • 1 red capsicum (150g), sliced thinly
  • 1 yellow capsicum (150g), sliced thinly

Method

Beans with tomato walnut sauce

    Boil, steam or microwave beans until tender; drain.

    Blend or process undrained tomatoes until smooth.

    Heat oil in large frying pan; cook garlic, spices and nuts, stirring, until fragrant. Add tomatoes, fresh coriander and sugar; cook, stirring, until heated through. Remove from heat, stir in capsicum and beans, season to taste.
