Method
1.Preheat oven to hot, 200°C. Spread pine nuts on an oven tray. Bake for 3-5 minutes, until golden brown. Transfer to a plate.
2.Process nuts, basil, cheese and garlic. Reserve 2 tablespoons oil. Add half the remaining oil. Pulse until well combined.
3.Add remaining oil (through chute with motor running, if using a large processor) for a smooth consistency. Season to taste.
4.Transfer to an airtight container and pour reserved olive oil over, to prevent discolouration. Store in the fridge.
