Basil pesto

Ingredients

Basil pesto
  • 1/2 cup pine nuts, toasted
  • 3 cup fresh basil leaves, loosely packed
  • 1/2 cup grated italian cheese (parmesan, romano)
  • 2 cloves garlic, sliced
  • 2/3 cup extra-virgin olive oil

Method

    Preheat oven to hot, 200°C. Spread pine nuts on an oven tray. Bake for 3-5 minutes, until golden brown. Transfer to a plate.

    Process nuts, basil, cheese and garlic. Reserve 2 tablespoons oil. Add half the remaining oil. Pulse until well combined.

    Add remaining oil (through chute with motor running, if using a large processor) for a smooth consistency. Season to taste.

    Transfer to an airtight container and pour reserved olive oil over, to prevent discolouration. Store in the fridge.
