Basic Christmas cake mix

This delicious basic Christmas cake mix recipe is incredibly easy to make. It's a great base to make a range of delightfully festive desserts to share with loved ones this Christmas season

  • 1 kilogram mixed fruit
  • 1/2 cup orange juice
  • 1/2 cup orange liqueur
  • 200 gram softened unsalted butter
  • 1 cup brown sugar
  • 4 eggs
  • 1 2/3 cup sifted plain flour
  • 1/2 cup chopped unsalted macadamias
  • 100 gram chopped dark chocolate

    In a large non-metallic bowl, combine mixed fruit, orange juice and orange liqueur. Set aside, covered, overnight.

    In a large bowl, using an electric mixer, beat butter and brown sugar together until pale and creamy.

    Add eggs, one at a time, beating well after each addition. Fold in sifted plain flour, mixed fruit and liquid, chopped unsalted macadamias and dark chocolate.
