Barley and smoked pork soup with pasta

Filled with smoked pork ribs, barley and vegetables, this barley and smoked pork soup with pasta is a complete meal in a bowl.

Barley and smoked pork soup with pasta
  • 1 cup barley, soaked in water for 1 hour
  • 400 gram smoked pork ribs
  • 2 carrots, peeled and cut into matchsticks
  • 1 celery stalk, cut into matchsticks
  • 1/2 leek (white part only), trimmed, washed and cut into discs
  • 1 red pepper, deseeded and diced
  • 4 large tomatoes, cut into quarters, deseeded then diced
  • 1 large onion, peeled and diced
  • 4 clove garlic, peeled and sliced
  • 200 gram cooked pasta of choice (about 150g raw)
  • 1 small bunch basil, torn
  • 5 tablespoon extra-virgin oil
  • 5 tablespoon grated parmesan

    Wash and drain the barley and put in a large pot with the pork ribs. Cover with water and bring to the boil, then reduce heat and simmer for 1 hour.

    Add the carrots, celery, leek, red pepper, tomatoes, onion and garlic and season to taste with salt and pepper. Add 1 cup water and simmer for another 30 minutes – the meat should be tender at this stage.

    Mix in the cooked pasta. To serve, cut the pork ribs to separate them, dish soup and ribs into bowls, sprinkle with basil, drizzle with extra virgin olive oil and scatter parmesan on top.
