Barley and smoked pork soup with pasta

Method

1.Wash and drain the barley and put in a large pot with the pork ribs. Cover with water and bring to the boil, then reduce heat and simmer for 1 hour.
2.Add the carrots, celery, leek, red pepper, tomatoes, onion and garlic and season to taste with salt and pepper. Add 1 cup water and simmer for another 30 minutes – the meat should be tender at this stage.
3.Mix in the cooked pasta. To serve, cut the pork ribs to separate them, dish soup and ribs into bowls, sprinkle with basil, drizzle with extra virgin olive oil and scatter parmesan on top.
