Barbecue lamb chops with mediterranean salsa

Barbecue lamb chops
  • 12 mid-loin lamb chops
  • olive oil
  • salt and freshly ground black pepper
Mediterranean salsa
  • 1/2 cup sun-dried tomatoes
  • 1/2 cup pitted black olives
  • 1/4 cup capers, rinsed and drained
  • 1/4 cup flat-leaf parsley, chopped
  • 2 tablespoon extra virgin olive oil


Barbecue lamb chops

    Heat a barbecue or grill on high. Brush the lamb cutlets all over with olive oil and season with salt and pepper. Barbecue or grill for 3 to 4 minutes on each side until the lamb is browned and cooked to your liking.
Mediterranean salsa

    To make the Mediterranean salsa, coarsely dice sun-dried tomatoes and olives and combine with the remaining salsa ingredients in a small bowl.

    Remove lamb to a serving platter and scatter with salsa to serve.
