Barbecue lamb chops

1.Heat a barbecue or grill on high. Brush the lamb cutlets all over with olive oil and season with salt and pepper. Barbecue or grill for 3 to 4 minutes on each side until the lamb is browned and cooked to your liking.

Mediterranean salsa

2.To make the Mediterranean salsa, coarsely dice sun-dried tomatoes and olives and combine with the remaining salsa ingredients in a small bowl.
3.Remove lamb to a serving platter and scatter with salsa to serve.
