Method

1.Using an electric mixer, beat butter and cinnamon in a medium bowl until light and creamy. Slowly add maple syrup while constantly beating, until well combined.
2.Sprinkle cut sides of banana with a little of the sugar. Melt extra butter in a medium frying pan over moderate heat. Add banana and remaining sugar; cook and turn for 1-2 minutes or until banana has caramelised and sugar has dissolved.
3.Serve hot crumpets topped with bananas and whipped butter.

You can serve maple butter and caramelised banana on top of pancakes, French toast or mini pikelets. To increase fibre, try wholemeal crumpets. Leftover whipped butter will keep in the fridge, covered in plastic wrap, for up to 2 weeks.
