Banana-bran Muffins
1.Preheat oven to 180°C. Line a 12-hole muffin pan with patty cases or baking paper.
2.In a large bowl, combine bran flakes, yoghurt and bananas. Stir in butter and egg.
3.Sift flour and baking powder together over banana mixture. Fold into mixture with sugar, being careful not to overmix.
4.Spoon into cases until three-quarters full. Top each with banana slices.
5.Bake for 20-25 minutes until cooked when tested. Serve warm or cool and store in an airtight container.
If liked, serve with a tub of your favourite yoghurt. Freshen day-old muffins by wrapping in a paper towel and heating in the microwave on high for 15 seconds.
