Method

1.Preheat sandwich maker or press, according to manufacturer’s instructions.
2.In a bowl, combine ricotta, currants, honey and cinnamon. Spread ricotta mixture on 2 slices fruit loaf. Top with banana and second slice of bread.
3.Lightly spray sandwich maker with cooking oil. Place sandwich in sandwich maker; close. Cook 5-10 minutes, until golden and crisp. Cut into wedges. Serve drizzled with honey.

Fruit loaf of choice may be used.
