Banana and pecan damper
Whipped maple butter
Method
1.Preheat oven to 200°C/180°C fan-forced. Grease a baking tray. Sift flour into a large bowl. Using fingertips, rub in butter. Stir in sugar. Make a well at centre. Add banana, 1/3 cup pecans and syrup. Using a round- bladed knife, stir in enough milk to make a soft sticky dough.
2.Turn out dough onto a lightly floured surface. Knead briefly until combined (dough should be soft and sticky). Place dough on prepared tray. Pat into a 17cm (diameter) round.
3.Brush top with a little extra milk. Sprinkle with remaining pecans. Cut a 1cm-deep cross in top of damper. Bake for 35-40 minutes, or until golden and it sounds hollow when tapped. Remove from oven.
4.To make maple butter, use a small bowl and electric mixer on medium speed to beat butter for 5 minutes, or until as pale as possible. Beat in syrup. Serve warm damper with whipped butter.
