Banana and pecan damper with whipped maple butter

Banana and pecans are a match made in baking heaven. Trade in your old banana bread recipe for this sweet damper - served with maple butter, it's irresistible.

Ingredients

Banana and pecan damper
  • 3 cup self-raising flour
  • 50 gram butter, chopped
  • 2 tablespoon caster sugar
  • 3/4 cup mashed banana
  • 1/2 cup chopped pecans
  • 1/3 cup maple-flavoured syrup
  • 1 cup milk, approximately, plus extra, to brush
Whipped maple butter
  • 125 gram butter, at room temperature
  • 1/4 cup maple-flavoured syrup

    Preheat oven to 200°C/180°C fan-forced. Grease a baking tray. Sift flour into a large bowl. Using fingertips, rub in butter. Stir in sugar. Make a well at centre. Add banana, 1/3 cup pecans and syrup. Using a round- bladed knife, stir in enough milk to make a soft sticky dough.

    Turn out dough onto a lightly floured surface. Knead briefly until combined (dough should be soft and sticky). Place dough on prepared tray. Pat into a 17cm (diameter) round.

    Brush top with a little extra milk. Sprinkle with remaining pecans. Cut a 1cm-deep cross in top of damper. Bake for 35-40 minutes, or until golden and it sounds hollow when tapped. Remove from oven.

    To make maple butter, use a small bowl and electric mixer on medium speed to beat butter for 5 minutes, or until as pale as possible. Beat in syrup. Serve warm damper with whipped butter.
