Balsamic chicken and cannellini bean salad

Ingredients
Balsamic chicken and cannellini bean salad
- 2 clove garlic, crushed
- 2 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- 600 gram chicken tenderloin, halved lengthways
- 400 gram can cannellini beans, rinsed, drained
- 250 gram truss cherry tomatoes, halved
- 60 gram baby rocket
- 1 lemon, juice
- fresh basil leaves, to serve
Method
Balsamic chicken and cannellini bean salad
- 1Place garlic, vinegar and oil in a bowl. Season to taste and whisk to combine. Add chicken and turn to coat. Stand for 10 minutes to marinate
- 2Heat a chargrill or barbecue on high. Drain chicken and cook for 1-2 minutes each side, until cooked through. Rest for 5 minutes. Cut chicken pieces in half, diagonally.
- 3Transfer chicken to a large bowl. Add beans, tomato, rocket and lemon juice and toss lightly to combine. Scatter over basil and serve.
