Balsamic chicken and cannellini bean salad

Ingredients

Balsamic chicken and cannellini bean salad
  • 2 clove garlic, crushed
  • 2 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 600 gram chicken tenderloin, halved lengthways
  • 400 gram can cannellini beans, rinsed, drained
  • 250 gram truss cherry tomatoes, halved
  • 60 gram baby rocket
  • 1 lemon, juice
  • fresh basil leaves, to serve

Method

    Place garlic, vinegar and oil in a bowl. Season to taste and whisk to combine. Add chicken and turn to coat. Stand for 10 minutes to marinate

    Heat a chargrill or barbecue on high. Drain chicken and cook for 1-2 minutes each side, until cooked through. Rest for 5 minutes. Cut chicken pieces in half, diagonally.

    Transfer chicken to a large bowl. Add beans, tomato, rocket and lemon juice and toss lightly to combine. Scatter over basil and serve.
