Balls of energy with peanut butter, oats and choc chips

This delicious recipe creates these little balls of energy packed with peanut butter, oats and choc chips. Pop in kids lunchboxes or enjoy for a tasty afternoon snack that's sure to keep them fueled

  • 1/2 cup peanut butter
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1 cup rolled oats
  • 1 cup cornflakes
  • 1/4 cup shredded coconut
  • 1/4 cup chocolate chips
  • 1/4 cup dried fruit

    Blend together the peanut butter, honey, vanilla extract and cinnamon until the mixture is smooth. Pour in the oats, cornflakes, coconut, chocolate chips and dried fruit and mix until well combined.

    Roll the mixture into golf-ball-sized shaped. Store the balls in an airtight container in the refrigerator for up to two weeks.
