Method

1.Preheat oven to 180°C/160°C fan forced. Tear 2 x 20cm squares of foil. Place foil on a large baking tray. Place an apple, upright, at centre of foil. Shape foil to make a basket around apple. Repeat, using remaining apple. Combine chocolate and apricot in bowl. Fill apples with chocolate mixture.
2.Combine cream, syrup and sugar in a small microwave-safe jug. Microwave on High (100%), in 30-second bursts, until heated and combined. Carefully pour cream over apples; pinch foil to enclose apples and form a parcel. Bake for 15-20 minutes or until apples are tender. Transfer apples to serving bowls. Drizzle with cooking liquid. Serve with ice-cream.
