Baked vanilla cheesecake slice

Serve this cheesecake slice with coffee for afternoon tea or as a dessert with berry coulis in the summer months. In winter, it’s great with chocolate or caramel sauce.

Method

1.Preheat oven to 180°C. Blend biscuits in a food processor to fine crumbs. Add the cinnamon and butter, then mix well. Press the crumbs into a large, lined slice tin, pressing down firmly to compact the base, then chill.
2.In a food processor, combine sugar and cream cheese, then whizz until smooth. Add the sour cream, vanilla and eggs. Pulse until well mixed and smooth.
3.Pour mixture over the base and bake for 30-40 minutes or until golden, puffed and set in the centre. Allow to cool before slicing, then serve with a dollop of thickened cream and a swirl of passionfruit syrup.
