Baked stuffed apples with spiced yoghurt

Filled with a crunchy fruit and almond stuffing, these wholesome baked apples are perfect for both dessert and breakfast.

Baked stuffed apples with spiced yoghurt
  • 2 large green-skinned apples (400g)
  • 2 tablespoon finely chopped almond kernels
  • 1 tablespoon each finely chopped seeded prunes, dried figs and dried apricots
  • 1/3 cup (95g) yoghurt
  • 2 teaspoon lemon juice
  • 2 teaspoon vanilla extract
  • 1 teaspoon honey
  • 1/2 teaspoon mixed spice

    Preheat oven to 180°C/350°F.

    Core unpeeled apples about three-quarters of the way down from the stem end, making hole 4cm (1½ inches) in diameter. Use a small sharp knife to score around centre of each apple.

    Combine nuts and dried fruit in small bowl; pack filling firmly into apples. Place apples in small baking dish. Bake, uncovered, about 35 minutes or until apples are tender.

    Meanwhile, to make spiced yoghurt, combine all remaining ingredients in small bowl.

    Serve apples drizzled with spiced yoghurt.
