Baked plums with vanilla marscapone

These baked plums are delicious for breakfast – try serving with Greek yoghurt or as a topping for your morning museli. They are also great spooned onto hot waffles or pancakes

Method

1.Preheat oven to 190°C. Place plums in an ovenproof dish with sugar, zest, juice, vanilla bean and water. Bake, uncovered, stirring occasionally, for 35-40 minutes or until the plums are tender.
2.Combine the cream and mascarpone. Remove vanilla bean from plum syrup and split it in half lengthways. Use a teaspoon to scrape the seeds from one half of the bean, then add them to the mascarpone. Mix, adding sugar until sweetened to your taste.
3.Serve the plums and syrup warm or cold, with a dollop of the vanilla mascarpone cream.
