Ingredients

Method

1.Preheat oven to 160°C (140°C fan-forced). Grease a 3-cup ovenproof dish.
2.Whisk eggs, essence and sugar in a large heatproof jug. Gradually add milk, whisking until combined. Pour into prepared dish.
3.Place dish in a roasting pan. Add enough hot water to pan to reach halfway up side of dish. Sprinkle custard with spices. Bake 30-35 minutes, or until centre is just firm. Remove from water. Serve warm or cold.

Make in 2 x 1 1/2-cup ovenproof dishes if you like. Check oven temperature and don’t overcook or custard will curdle.
