Baked bean nachos
Give tried-and-true baked beans a fun Mexican twist - this dish will be on the table in just 15 minutes!

Ingredients
Baked bean nachos
- 1 avocado, seed removed and peeled
- 1/2 lemon, juiced
- 230 gram packet corn chips
- 420 gram can sweet chilli baked beans
- 1 cup (120g) grated tasty cheese
- sour cream, to serve
Method
Baked bean nachos
- 1Preheat oven to 180°C (160°C fan-forced).
- 2In a small bowl, mash avocado; mix in lemon juice. Set aside.
- 3Arrange corn chips in an ovenproof dish or 6 ramekins. Top with beans and cheese.
- 4Bake for 10 minutes or until heated and cheese has melted. Serve with avocado and sour cream.
Notes
You can spread the mashed avocado over the baked beans and top with cheese before baking. If you can't find sweet chilli baked beans, use regular baked beans and serve with sweet chilli sauce.
