Baked bean bolognese
Packed full of delicious flavours and the goodness of beans, this hearty bolognese sauce is beautiful served over freshly cooked pasta.

Ingredients
Baked bean bolognese
- 1 tablespoon vegetable or olive oil
- 1 brown onion, finely chopped
- 3 short-cut bacon rashers, rind removed, chopped
- 400 gram pork and veal mince
- 575 gram jar bolognaise pasta sauce
- 420 gram can baked beans in tomato sauce
- 2 tablespoon chopped basil, plus extra leaves, to serve
- 400 gram macaroni
- cheddar cheese, grated, to serve
Method
Baked bean bolognese
- 1Heat oil in a frying pan over high heat. Add onion; cook and stir for 3 minutes or until soft. Add bacon and mince; cook, stirring to break up lumps, for 5 minutes or until browned.
- 2Add pasta sauce and 1/2 cup water to mince mixture. Bring to the boil. Reduce heat to low. Simmer, stirring occasionally, for 25 minutes or until sauce reduces. Add baked beans; cook and stir until heated. Remove pan from heat. Stir in basil.
- 3Meanwhile, cook pasta in a saucepan of boiling salted water for 8 minutes or until tender. Drain.
- 4Divide pasta among serving bowls. Top with bolognaise. Serve sprinkled with cheese and extra basil.
Notes
DIY idea: Serve bolognese with any type of pasta or use in lasagne. Layer bolognese between fresh lasagne sheets, top with grated cheddar cheese, then bake until golden and bubbling.
