Baked apples with honey yogurt
- 1/4 cup (35g) raisins
- 2 tablespoon craisins or sunbeam currants
- 2 tablespoon walnuts, coarsely chopped
- 2 tablespoon brown sugar
- 1/2 teaspoon ground cinnamon
- 4 granny smith apples, cored, halved widthways
- 20 gram butter, diced
- 1 cup (250ml) apple juice
- 1 1/2 cup (420g) low-fat yogurt
- 1/4 cup (90g) honey
Method
Baked apples with honey yogurt
- 1Preheat oven to 180°C. Lightly grease a baking dish.
- 2Combine raisins, Craisins, walnuts, sugar and cinnamon. Fill apples with half of raisin mixture and place in prepared dish. Sprinkle remaining mixture over apples, dot with butter and pour juice over top. Bake for 40 minutes, until soft.
- 3Meanwhile, combine yogurt and honey in a small bowl. Drizzle cooking juices over apples and serve with honey yogurt.
