Method

1.Heat a non-stick frying pan on high and spray with cooking oil. Fry bacon, for 3 minutes, turning, or until well browned. Transfer to a plate and keep warm.
2.Spray the same frying pan with a little more oil. Add eggs (all at once, or 2 at a time if the pan is small). Fry until cooked to taste, turning if desired.
3.Top the bottom half of each bun with a lettuce leaf. Arrange an even amount of bacon and tomato slices on the lettuce leaf. Finish with an egg and the sauce of your choice. Top with the other half of the bun and serve.

Add a slice of cheese and melt under the grill, if desired. Use ham instead of bacon to reduce the fat content. Don’t just serve this burger at breakfast, it makes a delicious, easy meal any time of day.
