Method

1.ln a large bowl, combine pineapple, bean sprouts, capsicum, mint, coriander and cashews. Set aside.
2.Heat oil in a wok or large frying pan on high. Stir-fry pork and garlic for 2 minutes until browned. Add sauce and stir-fry for 1 minute.
3.Dressing: Whisk all ingredients together in a small jug.
4.Add pork and Dressing to salad. Toss gently and serve.

Step 1 of salad can be prepared ahead of time. chill until required.
