Asian beef rolls
These tasty Asian beef rolls are our take of the Vietnamese bahn mi. Enjoy thinly sliced beef with fresh vegetables, chilli and herbs for a tasty lunchtime treat.

Asian beef rolls
- 1 tablespoon smooth salt-reduced peanut butter
- 1 teaspoon salt-reduced soy sauce
- 1 tablespoon boiling water
- 2 long wholegrain bread rolls (100g), split
- 60 gram (2 ounces) thinly sliced salt-reduced rare roast beef
- 4 butter lettuce leaves
- 1 small_piece carrot (70g), sliced thinly
- 4 long sprigs fresh coriander leaves (cilantro)
- 1 green onion, halved crossways
- 1/2 fresh long red chilli, sliced thinly
- fresh lime juice, to serve
Method
Asian beef rolls
- 1In a small bowl, combine peanut butter, sauce and water. Spread over the inside of bread rolls.
- 2Sandwich beef, lettuce, carrot, coriander, green onion and chilli between rolls. Add a squeeze of lime juice before serving, if desired.
Notes
medium GI You could use left-over roast beef or char-grill a rump steak.
