Asian beef rolls

These tasty Asian beef rolls are our take of the Vietnamese bahn mi. Enjoy thinly sliced beef with fresh vegetables, chilli and herbs for a tasty lunchtime treat.

Ingredients

Asian beef rolls
  • 1 tablespoon smooth salt-reduced peanut butter
  • 1 teaspoon salt-reduced soy sauce
  • 1 tablespoon boiling water
  • 2 long wholegrain bread rolls (100g), split
  • 60 gram (2 ounces) thinly sliced salt-reduced rare roast beef
  • 4 butter lettuce leaves
  • 1 small_piece carrot (70g), sliced thinly
  • 4 long sprigs fresh coriander leaves (cilantro)
  • 1 green onion, halved crossways
  • 1/2 fresh long red chilli, sliced thinly
  • fresh lime juice, to serve

Method

Asian beef rolls

    In a small bowl, combine peanut butter, sauce and water. Spread over the inside of bread rolls.

    Sandwich beef, lettuce, carrot, coriander, green onion and chilli between rolls. Add a squeeze of lime juice before serving, if desired.
