Arroz con pollo

A traditional Spanish and Latin American dish, Arroz con pollo combines delicious tender chicken with beautifully spiced rice and fresh vegetables.

Ingredients

Method

1.Heat oil in a large saucepan on high. Saute onion and garlic 1-2 minutes, until tender.
2.Add chicken and cook 1-2 minutes, stirring occasionally, until brown all over.
3.Stir in cumin and paprika. Cook 1 minute, until aromatic. Mix in rice, tomatoes and stock.
4.Bring to the boil. Reduce heat to low and simmer, covered, 10-15 minutes, adding capsicum peas and olives 2-3 minutes before end of cooking time. Sprinkle with parsley to serve.
