Method
1.Preheat oven to 200°C (180°C fan-forced). Line 2 baking trays with baking paper. Place garlic, ginger, jam and juice in a bowl; stir to combine. Add chicken; toss to coat. Place chicken in a single layer on one of the prepared trays.
2.Combine potato, extra juice, sesame seeds and oil in a bowl. Place potato in a single layer on remaining prepared tray. Bake both trays for 20 minutes, turning occasionally and swapping trays halfway through cooking, until browned and cooked. Serve with salad.
Make ahead: Marinate chicken in apricot mixture a day ahead. Cover, then refrigerate.
