Apricot Chicken
1.Preheat oven to 200°C (180°C fan-forced). Grease e large roasting pan. Place chicken in prepared pan. Whisk apricot nectar and soup mix in a jug. Drizzle apricot mixture over chicken in pan.
2.Bake, turning occasionally, for 35 minutes or until chicken is cooked. Add apricot to pan; cook for 5 minutes more or until glazed and cooked. Remove from oven.
3.Serve chicken with mashed potato and beans. Serve sprinkled with chives.
This is a simple variation on the classic. Make extra wings for budget entertaining. You can use any cut of chicken pieces you prefer; cooking time will vary.
