Method
1.Process apricots, honey, coconut cream, butter and 1/2 cup of coconut until finely chopped and mixture clings together. Transfer mixture to a medium bowl. Chill for 30 minutes.
2.Line a baking tray with baking paper. Place remaining coconut in a small bowl. Roll level tablespoons of apricot mixture into balls. Roll in coconut. Chill for 15 minutes.
Tip: These make a pretty and inexpensive gift for birthdays and Christmas; wrap 10 balls in clear cellophane tied with apricot ribbon.
