Apricot and apple strudel

Ingredients

Method

1.Preheat oven to 200°C (180°C fan-forced). Line a baking tray with baking paper. Pat apricots dry and chop coarsely. Combine apricot with apple, sugar, sultanas and pistachios.
2.Lightly spray a sheet of filo pastry with cooking oil. Top with a second sheet, spray with oil and repeat with four more sheets. Transfer to prepared tray. Place apricot mixture along one edge of pastry and roll up to enclose. Spray remaining sheet with oil and wrap around roll.
3.Lightly spray strudel with oil and bake for 30 minutes, until apples are cooked and pastry is golden. Serve dusted with icing sugar.

Work quickly when using filo pastry or it will dry out and crack. Keep extra filo well covered. You can make the strudel ahead of time and warm it in a moderate oven for about 5 minutes before serving.
