Method
1.Preheat oven to 200°C (180°C fan-forced). Lightly grease a roasting pan with some of the butter. Place apple in prepared pan, dot with remaining butter. Sprinkle sugar, allspice and juice evenly over apple. Top with zest and thyme.
2.Bake for 25-30 minutes or until apple is tender, stirring halfway through cooking. Remove zest and thyme.
3.Place stock in a large saucepan over moderate heat. Bring to a simmer. Add apple mixture to stock and bring to the boil. Cook for 5 minutes or until mixture thickens slightly.
4.Blend or process mixture until smooth.
Use any apple variety you like, but you might need to adjust the sugar quantity to your liking. If making ahead, stir through 1 tablespoon lemon juice to prevent sauce from discolouring.
