Apple pie filo tart with custard and cream

Apples anchor cinnamon, raisins, ginger and golden syrup in this delicious sweet tart recipe. Topped with smooth custard and served with cream, this quick dessert is a winner

Method

1.Preheat oven to hot, 200°C. Line two oven trays with baking paper.
2.Place one sheet of filo pastry on a clean surface. Melt butter and brush a little over pastry. Sprinkle with combined sugar and cinnamon.
3.Repeat layers with five more sheets of filo pastry and sugar mixture. Cut into quarters and place on one tray. Bake for 20 minutes until golden and crispy, then cool.
4.In a bowl, toss apples, golden syrup, raisins, ginger and cinnamon. Spread over second tray, then bake for 12-15 minutes until softened.
5.Top pastry squares with custard and arrange apple mixture on top. Serve drizzled with cream.

This was one of my all-time favourite desserts as a child and when I’d see Mum preparing it, I’d lick my lips with anticipation. By all means use filo pastry but Mum always used flaky pastry as we’d not yet heard about filo in the ‘70s!
