This apple custard cake contains thinly sliced apples, held together with a creamy custard, freckled with sweet vanilla pod seeds in a golden crust.

Method

1.Preheat oven to 150°C. Grease a loaf or small cake tin with butter and dust liberally with extra flour.
2.In a medium saucepan, melt the butter over a medium-low heat. Add the milk and vanilla pod, then heat until just warmed. Take off the heat and allow to infuse for 20 minutes.
3.Remove vanilla pod, which will now be quite soft, and with the tip of a sharp knife, scrape the vanilla seeds into the warmed milk. Discard the pod.
4.In a large bowl, whisk eggs and sugar until well combined and light and creamy. Add the warm milk mixture, whisking as you pour.
5.Sift in combined flour and baking powder. Stir to combine well.
6.Add the sliced apples and mix gently with your hands. Make sure the apple slices are well coated in the custard/batter.
7.Pour and spoon the mixture into prepared tin and bake in preheated oven for 1½ hours. If it starts to colour too much on the top, cover with foil.
8.Allow cake to cool and set for 20 minutes before turning out and slicing.
