Apple, custard and cinnamon donut cakes

There are few things more wonderful then a warm, cinnamon sugar dusted donut - it's only made better with a beautiful stewed apple and custard filling.

Method

1.Blend custard powder and 1 tablespoon water in a small saucepan until smooth. Stir in custard; cook and stir over moderate heat until custard boils and thickens. Add essence. Transfer to a heatproof bowl; cover surface to prevent a skin forming. Chill for 1 hour.
2.Preheat oven to 200°C (180°C fan-forced). Grease 20 holes of 2 x12-hole round-base patty pans.
3.Using an electric mixer, beat butter, sugar, egg, flour, milk and extra essence in a small bowl for 3 minutes or until light and creamy. Spoon half the mixture into prepared holes; spread slightly, then make a small indent at centre of each. Fill indent with apple and custard. Spoon remaining mixture over top; spread gently to enclose filling. Bake for 10-12 minutes or until golden.
4.Combine cinnamon and extra sugar on a plate. Brush cakes with extra butter; quickly roll in cinnamon sugar. Serve warm.
