Ingredients

Apple and ricotta fritters
  • 1 3/4 cup (420g) ricotta cheese
  • 2/3 cup (90g) gluten-free self-raising flour
  • 2 tablespoon caster sugar
  • 1/2 teaspoon ground nutmeg
  • 1 egg
  • 1 large apple (200g), peeled, chopped finely
  • vegetable oil, for deep-frying
  • 1/3 cup (75g) caster sugar, extra
  • 1 teaspoon ground cinnamon
  • 2 tablespoon pure maple syrup

Method

    Combine ricotta, sifted flour, sugar, nutmeg, egg and apple in medium bowl.

    Heat oil in large saucepan; deep-fry rounded tablespoons of ricotta mixture, in batches, until browned lightly. Drain on absorbent paper. Toss fritters in combined extra sugar and cinnamon.

    Serve fritters drizzled with maple syrup.
