Apple and oat mini muffins with berries and cinnamon

Little hands will love this mini muffin recipe! Filled with the goodness of apple, oats and berries, these muffins are delicious packed in lunchboxes or enjoyed as an after school snack

  • 1 1/2 cup self-raising flour
  • 1 cup rolled oats
  • 3/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 cup finely diced apple (1 medium apple)
  • 2 eggs
  • 3/4 cup milk
  • 100 gram butter, melted
  • 1 cup fresh or frozen berries

    Preheat the oven to 180°C fanbake and line two mini muffin trays with cupcake papers or mini cake cases.

    Combine the flour, rolled oats, brown sugar and cinnamon in a large bowl. Mix together well and stir in diced apple. Whisk together eggs, milk and butter and stir in berries.

    Fold the wet ingredients into the dry until just mixed. Spoon into prepared cases and bake trays (both at once) for 15-20 minutes until puffed and golden, and a skewer inserted into the centre comes out clean.
