Apple and marmalade streusel puddings
Spoil the family with these tasty little puddings, served with lashings of custard or cream.

Ingredients
Streusel
- 1/2 cup (75g) plain (all-purpose) flour
- 1/4 cup (35g) self-raising flour
- 1/3 cup (75g) firmly packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 100 gram (3 ounces) butter, chopped
Apple and marmalade streusel puddings
- 4 medium_piece apples (600g)
- 20 gram (¾ ounce) butter
- 2 tablespoon water
- 1 tablespoon caster (superfine) sugar
- 1/2 cup (170g) orange marmalade
- 2 teaspoon icing (confectioners') sugar, for dusting
- custard, cream or ice-cream, to serve
Method
Apple and marmalade streusel puddings
- 1To make streusel, blend or process ingredients until combined. Roll into a ball. Enclose in plastic wrap; freeze 1 hour or until firm.
- 2Preheat oven to 200°C/400°F. Grease four ¾-cup (180ml) ovenproof dishes.
- 3Peel and core apples, then thinly slice.
- 4Melt butter in a medium frying pan; cook apple, the water and sugar, stirring, about 10 minutes or until apple is tender. Stir in marmalade. Spoon mixture into dishes.
- 5Coarsely grate streusel onto a sheet of baking paper; sprinkle over apple mixture.
- 6Bake puddings about 20 minutes or until browned lightly. Dust with sifted icing sugar before serving. Serve with custard, cream or ice-cream.
Notes
The cooked apple mixture can be stored, covered, in the fridge overnight. Streusel can be frozen for up to a week.
