Apple and cherry strudel

Sink your fork into the divine flaky, buttery crust to reveal the sweet, warm stewed apple and cherry stuffing of this strudel.

Ingredients

Method

1.Preheat oven to 200°C (180°C fan-forced). Line a baking tray with baking paper. Toss apple, cherries, sugar, lemon rind, cinnamon and half of breadcrumbs together in a large bowl. Set aside.
2.Place two sheets of filo, overlapping by one-third, onto a flat surface. Spray with cooking oil spray. Top with two more sheets of pastry and spray with oil. Repeat process twice more to have four layers.
3.Spread apple mixture along one side of pastry, 8cm from edge. Scatter remaining breadcrumbs over apple and fold 8cm pastry border over filling. With both hands, one at each end, roll pastry and filling into a log with slightly tapered ends. Spray remaining two sheets of pastry with cooking oil spray and wrap around log. Carefully lift onto prepared tray and curve into a horseshoe shape. Spray with cooking oil spray.
4.Bake for 45 minutes, until golden and crisp. Cool for 15 minutes. Dust with icing sugar before cutting into thick slices. Serve with a scoop of ice-cream.
