Apple and apricot crumble

The humble apple crumble jazzed up with the glorious addition of apricot - wonderful served warm with a dollop of ice-cream.

Ingredients

Apple and apricot crumble
  • 800 gram can pie apples
  • 400 gram can apricot halves, drained, halved
  • cream or ice-cream, to serve
Topping
  • 1/2 packet plain sweet biscuits
  • 100 gram cold butter, chopped
  • 2 tablespoon brown sugar
  • 1/3 cup desiccated coconut
  • 1/4 cup rolled oats

Method

Apple and apricot crumble

    Preheat oven to moderate, 180°C. Lightly grease an 8-cup oven proof dish.

    Spoon combined apple and apricot into prepared dish.

    To make topping, place biscuits, butter and sugar into a food processor. Process until just combined -the mixture should have a coarse texture. Transfer to a bowl. Stir in coconut and oats.

    Sprinkle topping evenly over fruit. Bake for 25-30 minutes, or until golden. Serve with cream or ice-cream, if desired.

Notes

If you don't have biscuits on hand, use 1/3 cup plain flour instead. Rub in the butter, stir in the remaining ingredients and bake as directed.
