Apple and apricot crumble
The humble apple crumble jazzed up with the glorious addition of apricot - wonderful served warm with a dollop of ice-cream.

Ingredients
Apple and apricot crumble
- 800 gram can pie apples
- 400 gram can apricot halves, drained, halved
- cream or ice-cream, to serve
Topping
- 1/2 packet plain sweet biscuits
- 100 gram cold butter, chopped
- 2 tablespoon brown sugar
- 1/3 cup desiccated coconut
- 1/4 cup rolled oats
Method
Apple and apricot crumble
- 1Preheat oven to moderate, 180°C. Lightly grease an 8-cup oven proof dish.
- 2Spoon combined apple and apricot into prepared dish.
- 3To make topping, place biscuits, butter and sugar into a food processor. Process until just combined -the mixture should have a coarse texture. Transfer to a bowl. Stir in coconut and oats.
- 4Sprinkle topping evenly over fruit. Bake for 25-30 minutes, or until golden. Serve with cream or ice-cream, if desired.
Notes
If you don't have biscuits on hand, use 1/3 cup plain flour instead. Rub in the butter, stir in the remaining ingredients and bake as directed.
