Aperol spritz cocktail

Originating in northern Italy, Aperol spritz has become a popular Summer drink, making it an essential recipe to be included in Deborah Hutton's new book, Entertaining Made Easy. It's a great way to start a meal and whet the appetite.

Aperol spritz cocktail
  • 90 millilitre prosecco (or another dry sparkling white wine)
  • 1/2 cup ice-cubes
  • dash of soda
  • 60 millilitre Aperol aperitif
  • 1 slice lime or orange, to garnish

    Pour prosecco into a glass over ice-cubes.

    Add the dash of soda and top with Aperol.

    Gently stir with a spoon and garnish with a lime or orange slice.
