Animal Crackers

1.Preheat oven to 180°C (160°C fan-forced). Line 2 trays with baking paper.
2.Place cheddar and butter in a food processor. Process until well combined. Sift together flour, salt and paprika. Add to cheddar mixture with parmesan. Process until almost combined. Transfer dough to a floured surface and bring together with hands. Knead until smooth.
3.Divide dough in half and wrap in plastic wrap. Chill for 20 minutes.
4.Lightly flour a work surface. Roll out dough until 5mm thick. Using animal-shaped cutters, cut out shapes and place on prepared trays. Repeat with remaining dough. Brush with a little milk and sprinkle with seeds. Bake for 10-12 minutes, until golden. Cool and store in an airtight container until ready to serve.

For a more adult flavour, these biscuits can be sprinkled with cumin or caraway seeds.
