Aloha pork and pineapple meatballs

This recipe for Aloha meatballs combines Hawaiian favourites pork and pineapple into a comforting and easy midweek family meal. Serve with noodles and enjoy!

Method

1.In a bowl, combine mince, breadcrumbs, onion, egg, sauce and ginger. Season and mix well. Roll 2 tablespoons of mixture at a time into balls. Arrange on a lined oven tray.
2.In a large frying pan, heat half the oil on medium. Cook meatballs in two batches for 3-4 minutes each until browned. Drain on a paper towel.
3.In the same pan, heat remaining oil on high. Sauté capsicum for 3-4 minutes until softened.
4.Add pineapple, soy sauce, water, sugar and vinegar. Bring to a simmer, stirring. Return meatballs to pan, then reduce heat to low and simmer for 20-25 minutes until sauce is thick and sticky.
5.Cook noodles following packet instructions. Serve meatballs on noodles, sprinkled with sliced onion.
