Almond energy bar
Give yourself a kick-start to the day with these super tasty almond energy bars, made with the goodness of oats, coconut and nuts. It'll keep you sustained throughout the day to prevent mindless snacking.

Ingredients
Almond energy bar
- 2 cup Countdown Rolled Oats
- 3/4 cup chopped dried fruit medley
- 3/4 cup chopped natural almonds
- 1/2 cup wholemeal flour
- 1/2 cup Countdown Shredded Coconut
- 1/2 cup honey
- 90 gram butter, chopped
- 1 egg, lightly beaten
Method
Almond energy bar
- 1Preheat oven to moderate, 180°C.Line an 18 x 28cm lamington pan with baking paper.
- 2In a large bowl, combine oats, almonds, fruit, flour and coconut. Mix well.
- 3Heat honey and butter together in a small saucepan over low heat until well combined. Remove from heat, cool for 5 minutes, then whisk in egg.
- 4Blend the honey mixture into dry ingredients, mixing well. Press firmly into prepared pan.
- 5Bake for 20-25 minutes until golden. Cut into 12 pieces while still warm. Cool completely then store in an airtight container.
Notes
It's important to use chopped fruit and nuts and to press the mixture firmly into the pan (with a fork or the base of a glass) to help prevent crumbling. Add ¼ cup choc chips if liked, or dip one end or drizzle bar with melted chocolate.
