Acai breakfast bowl

Acai berries contain very high levels of antioxidants, good-for-you fatty acids along with loads of essential vitamins and minerals - great for cardiovascular health and reducing cancer risk. This bowl is high in fibre to keep the digestive system and blood cholesterol levels healthy.

Ingredients

Acai breakfast bowl
  • 2 100g packets frozen acai puree, chopped
  • 2 cup chopped watermelon
  • 1/2 medium banana, peeled
  • 1/2 cup frozen raspberries
  • 1 cup ice cubes
  • 1/2 medium banana, sliced, extra for serving
  • 1 cup mixed fresh berries, for serving
  • 1/3 cup toasted muesli
  • 2 teaspoon honey, for serving

Method

    Place frozen puree, watermelon, banana, raspberries and ice cubes in a high speed blender in order. Blend on high speed for about 1 minute or until smooth. If required stop the blender and push the ingredients down before blending again. Spoon into serving bowls.

    Top with extra banana, fresh berries and muesli. Drizzle with honey and serve immediately.

Notes

Suitable to freeze. Frozen acai puree is available from health food stores.
