How to make your own Easter hot cross buns

No-knead hot cross buns

Ready in 2½ hours | Makes 16

  • ¼ cup warm water

  • 1½ Tbsp yeast

  • 1 tsp honey

  • 11/3 cups milk

  • 60g butter

  • 2 tsp cinnamon

  • 2 tsp mixed spice

  • 1 tsp ground ginger

  • 2 eggs, lightly beaten

  • 5 cups high-grade flour

  • ¼ cup caster sugar

  • 1 cup raisins

  • ¼ cup mixed peel

  • ¼ cup maple syrup, to glaze

Paste for crosses

  • 3/4 cup flour

  • 1 tsp caster sugar

  • ¼ cup milk

Method

Pour water into a small bowl and sprinkle in the yeast. Stir in honey, then leave at room temperature for about 5 minutes until foamy and puffed up.

In a saucepan, warm the milk and butter until just melted.
