Top tips for cooking chooks on the barbie

  • If your barbecue doesn’t have a hood, cover the meat with a terracotta pot or foil roasting tray. Trapping the heat helps food cook more quickly and evenly.

  • Cook a butterflied chicken rather than a whole chicken. ‘Butterflied’ chicken means the backbone of the bird has been cut out, so the chicken lies flat. As well as speeding up cooking, it also means your chicken will cook more evenly and is easier to carve.

  • Use a meat thermometer to ensure your meat is cooked correctly.

  • Make sure you rub a little oil on to your cleaned and preheated barbecue grill just before you start cooking to ensure there’s no stickage.
