How to make simple lemon curd

75g chopped butter

¾ cup caster sugar

½ cup lemon juice

2 tsp finely grated lemon zest

1 egg plus an extra egg yolk

Instructions

  • Add butter, sugar, juice and zest to a saucepan and stir over low heat until butter melts and sugar dissolves.

  • In a bowl, whisk one whole egg with an extra yolk then whisk it into lemon mixture to combine well.

  • Cook for 5 mins, stirring constantly until mixture coats the back of spoon.

  • Set aside to cool.

  • Strain through a fine sieve.
