Workmen’s savoury vegetarian muffins
Nici Wickes' shares her mum's tried-and-true workmen's muffins recipe. These muffins aren’t your usual light and fruity ones – they’re solid and filling with veges, feta and a hint of curry powder

ingredients
- 1 1/2 cup flour
- 3 teaspoon baking powder
- 1 heaped tsp curry powder
- 1/2 cup oil
- 1/2 cup plain yoghurt
- 2 beaten eggs
- 1/4 cup crumbled feta
- 1/4 cup each of finely chopped capsicum, spring onions and parsley
- 1/4 teaspoon salt and a decent grind of black pepper
- grated cheese for the top

Set oven to fan bake at 175°C. Grease a regular 12-hole muffin tin.

Sift the dry ingredients into a bowl. Whisk oil, yoghurt and eggs together, then add to the dry ingredients. Add the feta, chopped veges, herbs and the seasoning. Mix to just combine.

Drop spoonfuls into the muffin tins, sprinkle with the grated cheese and bake for approximately 12-15 minutes until springy to touch and a skewer inserted comes out clean.

Cool. Remove from the tin, wrap in a tea towel and deliver to the workmen. They will appreciate it, I promise!

- Seasons may dictate what you put in these – sweetcorn kernels, grated courgette, frozen peas, other herbs, a tablespoon of chutney, or whatever.
