Watermelon, radish & balsamic beef
The salty-sweet combination of watermelon and feta is unbeatable, and when served with thin ribbons of beef and radish, it's next level good.

Watermelon, radish & balsamic beef
- 500 gram beef fillet or rump steak
- 2 tablespoon olive oil
- 1 tablespoon balsamic glaze, plus extra to drizzle
- 1 kilogram seedless watermelon, rind removed, cut into chunks
- 3 cup baby spinach
- 1 bunch radish, trimmed, thinly sliced
- 1 avocado, seeded, thinly sliced
- 1 bunch mint, leaves picked
- 90 gram feta, crumbled

In a shallow dish, marinate steak in combined oil and balsamic glaze for at least 20 minutes. Season.

Preheat a char-grill pan or barbecue on high. Grill steak for 2 minutes each side until cooked to taste. Rest, loosely covered with foil, for 5 minutes, then thinly slice.

In a large salad bowl, combine watermelon, spinach, radish, avocado and mint. Top with steak and crumble feta over. Drizzle with extra glaze to serve.

✦ For a no-cook meal, substitute cooked prawns for beef and lime juice for balsamic glaze.
